3 Tablespoons coarse grained mustard (like grey poupon)
1 Tablespoon flour
1 Tablespoon honey
2 teaspoons cider vinegar
~ 1 lb boneless skinless thighs (you can use breasts - cut them in peices , pound them a bit, and cook a little longer) the ingredients make enough to coat 6 thighs
~ a cup of seasoned breadcrumbs in a tupperware dish
2 tablespoons vegetable oil
combine the mustard, honey, vinegar, flour - important to know i rarely measure this exactly but use a soup spoon and go by the ratio above
brush on the thighs then roll in the breadcrumbs, set on a plate
**** key cooking tip here - if you let the breaded things sit for 5-10 minutes, it stays on the meat and doesn't end up in the pan
heat up a skillet with the oil on medium heat, 6-8 minutes per side until nice and brown and cooked through
