chicken enchiladas
1/2 lb boneless, skinless chicken cooked and shredded
1 med onion fine chop
4 oz can diced green chiles
4 oz monterey jack or cheddar shredded
8 6 inch tortillas
salsa
in medium bowl combine chicken, chiles, onion and cheese
microwave tortilla for 10 seconds for easy roll up
spoon filling across tortilla and roll up
place seam side down in pan
repeat for remaining
pour salsa over
cover pan and cook at 350 for 15 minutes , remove foil and bake for 5 more minutes

I ALWAYS double this recipe and freeze 1/2
and the onions are pretty raw in this, i'm ok with it but some might not be, subsequent reheating fixes that if you don't like it, or you can saute them for 5 minutes before adding them to the bowl, that works just as well
