2 T olive oil
4 scallions chopped
3 T flour
1 t cumin
1 pt 1/2 & 1/2 cream
8 oz cream cheese softened*
1 C shredded sharp cheddar
1 C shredded Monterey Jack
2 10 oz cans Rotel - drained a bit (ie opne the can and tip off the top liquid
4 jalapenos, minced
*you can use low fat cr cheese and cheeses for this but really - why bother?
Heat up the olive oil med low heat
add the scalliongs cook 2 minutes
stir in flour & cumin cook 1 minute - stirring constantly
gradually stir in the 1/2 & 1/2 stirring, bring to a simmer
add in the cream cheese - stir once in a while until it melts
repeat with the monterey jack
add rotel and jalapenos
bring up to a simmer - simmer one minute
chill it down or serve it warm
garnish with chile powder and more chopped scallions if you like
