Whatever You Find Nabeyaki Udon

find any ingredients you think would taste good in an udon and prepare it..
examples: fried egg, fried spam, tofo, mushrooms, oden (fishcake), kamaboko(rainbowshaped fishcake), vegies, etc.

udon noodles (fresh or pre-fattened)

for broth:

hondashi (bonito soup base powder)

soy sauce

mirin

sugar

Prepare udon noodles per package directions. rinse till cooland drain. set aside

prepare soup base to taste... I would start by adding a couple teaspoons of hondashi to a quart of hot (almost boiling) water into a 2quart pot/saucepan... then a little bit of soysauce, mirin and sugar. until you like it.

when the broth seems just right, add a good amount of udon noodles (not so that it is crammed in there. and the other ingredients you have waiting) and bring to boil.

remove from flame

eat. remember to slurp up the noodles, if you do it right, you will have cooled the noodles that you are slurping and you will get a nice dose of broth aroma through your mouth and nose... this is the proper way to eat it. if you have enough control, you might even be able to avoid getting broth all over your face.
