I'm sharing because these are eyes-rolling-back-into-your-head good
[this is supposed to be 4 servings - it isn't, i had 3 1/4 lbs, that is 3 servings - next time i'm going to double the sauce and make 5 lbs]
Maple Glazed Ribs Country Style Ribs
3-4 lbs pork country style ribs (the meaty ones)
1 cup maple syrup (real syrup not aunt jemima)
3 tablespoons brown sugar
1/2 cup ketchup
2 tablespoons cider vinegar
1 tablespoon worcestershire (I wasn't really measuring, probably more)
1/2 t salt
2 t dried mustard
1 clove garlic minced
1 small onion, small dice
2 good squirts of that rooster chile sauce (or about 6 shakes tabasco)
place ribs in a large pot* and cover with water, simmer covered for about an hour, drain and place in shallow dish
*the fat bubbles up a bit, i skimmed it, but you definitely want some space between the water line and the top of the pan
in a small pot, just dump in all of the ingredients, bring to a boil, simmer for a few minutes
pour the sauce over the ribs and marinate for 2-3 hours
prepare the grill (i used my gas grill yesterday, a charcoal would be better using indirect heat) medium heat
lift the ribs out of the sauce and pour the sauce back into a saucepan - bring it to a boil and cook for several minutes
transfer ribs to grill, cook for about 20 minutes, turning and basting often, serve remaining sauce on the side

preheat oven to 350
ribs on a rack, cover with foil, bake for 1 hour 20 minutes until tender and cooked through
remove ribs from roasting pan, remove rack and drain off fat
proceed w/ the marinade, (not as long (1 hour?) might not even need to marinade) then just bake in the marinade uncovered for 30-40 minutes basting a few times (more if it was in the fridge until hot)
